Makes 1 popsicle
You better make this after the kids go to bed so you don’t give away the secret ingredient! Avocado is the main ingredient cleverly disguised by chocolate and sweetener. Freezing the popsicle also helps to hide the avocado flavor.
50 g avocado, pureed very smooth in a food processor
4g coconut oil
6g unsweetened bakers chocolate squares
3.5 g calorie-free sweetener, Truvia
3–5 drops of vanilla flavor, Bickford
After measuring all ingredients on a gram scale, melt the coconut oil and chocolate together in the microwave. Add the avocado, Truvia, and vanilla flavor. Stir very well to combine. Pour into a popsicle mold, place a wooden popsicle stick in the center of the pop, and freeze overnight. Once frozen, run the underside popsicle mold under hot tap water for a few seconds to loosen the pop. Remove the pops and store in plastic baggies in the freezer.
Notes: This does not have to be frozen to enjoy; this can be served immediately as a smooth chocolate pudding. For those who require a lower ratio, eliminate the oil or add pureed banana for extra favor.
